The Breafkast Popsicle
Popsicles for breakfast? I know what you’re thinking. But hear me out. With just the right combination of ingredients, these can be an absolute POWERHOUSE of nutrition and help any, let’s call them, particular children (IYKYK), get in some quality protein, fiber, fat, carbs, iron, magnesium, etc. I’ve included two versions I like to rotate between. The second has some liver capsules (I really love the quality of Heart and Soil - not sponsored!), which sounds really strange but is filled with bioavailable iron that can often be hard to get in a little one’s (and your own!) diet. Try these out and let me know what you think!
Breakfast Popsicles
Popsicle #1: The Protein Pop
1 cup whole milk
1/2 cup greek yogurt
1/4 cup creamy peanut butter
1/2 cup chia seeds
2 bananas
1 cup frozen berries
1/2 cup frozen peas
4 scoops protein powder of choice (I used Ballerina Farm vanilla protein in this version but also love Heart and Soil’s Protein)
*optional: 4 scoops collagen powder if not in protein powder
*optiona:l 1 Tbs colostrum if not in protein powder
Total protein: 24g per popsicle
Popsicle #2: Frozen Hot Chocolate Pop
1 cup organic almond milk
2 bananas
1.5 cups frozen berries
1 cup almond butter
2 Tbs cacao (optional if you’re kids like chocolate)
1/2 cup hemp seeds
1 cup frozen spinach
4 liver capsules, emptied into blender
Total protein: about 11g per popsicle
Add everything to a blender and blend in high until smooth. Pour into silicone popsicle molds and freeze overnight. Makes a great breakfast on a hot day!
Each makes about 6 popsicles, depending on size of your molds.
